Ode to the Pioneer Woman

Life is so busy sometimes that the last thing I want to think about is cooking.

I know...I have to...cause for some reason my children all think they need to eat three times a day (or more). Go figure.

But...I have been reading the pioneer woman and I have to say I have been inspired to cook again.

Troy's birthday dinner last night was courtesy of recipes she provides on her cooking blog and her new cooking website.

Who knew I could be gourmet?

But...as proof...scallops and pasta:

I am so happy to be back in the kitchen and enjoying it!

The best part? My family has enjoyed it too.

Next up?

Orange Chicken


And...we already made this one: Butter Chicken.

I so envy you. I can't seem to find any enthusiasm to cook or even put together a basic menu anymore. I think it's the dilapidated kitchen, or the lack of time, or the lack of enthusiasm or thankfulness on the part of my children . . .

That looks good... do you have her cookbook? I absolutely love her flat apple pie. It's one of our favorites. (although mine never turns out as pretty as hers.)
